Ingredients:

For the dough:

  • Flour – 1.5 tbsp.
  • Salt – 0.5 tsp.
  • Butter – 100 g
  • Water – 3-4 tbsp. l

For filling:

  • Mushrooms – 350 g
  • Vegetable oil – for frying
  • Salt, pepper – to taste
  • Garlic – 2 cloves
  • Vinegar – 1 tbsp. l

For cooking onions:

  • Onion – 1 pc. (large)
  • Vegetable, butter – 1 tbsp. l
  • Sugar – 1-2 tbsp. l
  • Vinegar – 1 tbsp. l

To fill:

  • Eggs – 2 pcs.
  • Sour cream – 0.5 tbsp.
  • Salt, pepper – to taste
  • Hard cheese – 100 g
  • Greens – to taste

Cooking method:

  1. First cut the mushrooms into large wedges. Salt and pepper to taste. Cover the baking sheet with parchment paper. Put the mushrooms on it, smooth it and send it to the oven preheated to 190 C (375 F) for 20-30 minutes to let it dry.
  2. While the mushrooms are in the oven, cook the onions. To do this, peel, wash, and cut into strips of 4-5 millimeters wide. Heat a wide pan, add 1 tbsp. l vegetable and 1 tbsp. l butter. When the oil is warm, mix a little and add the onion. Fry until transparent, add sugar and vinegar (preferably balsamic).
  3. Sauté the onion until the sugar melts and caramelizes on the surface of the onion. If the pan becomes dry and the onion is not ready, add water to a tablespoon.
  4. Now the dough! Mix salt and sifted flour. Separate the yolk of one egg from the protein. Grind the soft butter with flour and yolk until crumbs are present. Add water over a tablespoon and knead elastic dough.
  5. Roll the dough into a round pancake between two sheets of parchment paper up to 1.5 cm. Put it in a shape, cut the edges. Use a fork to chop the bottom in several places so that it does not rise during baking. Since the dough heats up quickly, send it to the refrigerator with the mold for 15-20 minutes. Heat the oven to 200 ° C (400 ° F) and bake the base for 20 minutes until golden.
  6. In the meantime, mix the egg, the second egg white, sour cream and coarsely grated cheese. At this point, the mushrooms and onions have cooled slightly. Combine with the cheese mixture, add finely chopped garlic and herbs.
  7. Remove the finished base for the tart from the oven. Lay out the filling. Reduce oven temperature to 175 C (325 F). Bake the tart for another 30 minutes until golden.
